Peach cream cheese pie.

A pie crust can be made of many things.  Pastry crusts are popular, as are graham cracker and cookie crumb.  But one made of toasted coconut?

That's the crust of choice for the cream cheese pies made at Katherine's Cafe Amore in Eureka Springs. Alternately referred to as pie and cheesecake, the confection that we discovered here always consisted of lovely toasted coconut strings as a base and a smooth
cream cheese layer.

We've tried several variations (when we haven't gone for the famed chocolate cake or tiramisu instead) but our favorite by far is the summer favorite with peaches -- made from fresh Arkansas peaches, a tart complement to the rest of the pie. 

When you go, we can advise you to get ANYTHING with the delicious walnut pesto involved, and don't skip on dessert.
